Kim chi dưa leo (dưa chuột) được ví như là một người anh em của kim chi cải thảo. Khi ăn có vị giòn giòn, cay cay, thấm đậm rất ngon. Kết hợp với các món xào, chiên chống ngấy nhé!
Rửa sạch và bỏ hai đầu quả dưa leo cho khỏi đắng, chừa một đoạn nhỏ ở đuôi, cắt dưa leo làm 4 sao cho dưa không bị tách hẳn thành miếng rời nhau.
Ướp dưa leo với muối, để yên khoảng 10 phút.
Trong lúc chờ dưa leo ngấm gia vị, cắt hành tây, hẹ, cà rốt và băm nhỏ tỏi cho vào một cái tô lớn.
Trộn đều hỗn hợp cà rốt, hẹ, hành tây với 50ml nước, ớt bột, 45ml nước mắm, 15gr đường trắng.
Đổ phần nước muối dưa leo đi, lấy dưa đem nhồi và ướp với hỗn hợp gia vị ớt ở bước 4.
Kim chi dưa leo có thể ăn được ngay mà không cần phải đợi lâu nhé! Trước khi ăn, rắc chút mè trắng rang lên cho ngon hơn nào. Dưa đầy đủ hương vị cay - mặn - ngọt rất bắt cơm đấy.
