Khoai lang gọt vỏ, ngâm ngay khoai vào nước cho khỏi thâm. Cắt khoai thành miếng dài hình răng cưa khoảng 1,5cm. Ngâm khoai vào nước muối trong khoảng 30 phút.
Vôi hòa với nước, để lắng qua đêm rồi gạn lấy phần nước trong. Ngâm khoai bằng nước vôi trong trong khoảng 3 – 4 tiếng. Khoai sau khi ngâm nước vôi vớt ra xả lại nhiều lần dưới vòi nước cho sạch mùi vôi rồi để ráo.
Cân lại khoai, cứ 1kg khoai thì dùng 400g đường.
Đặt nồi khoai lên bếp, sên với lửa to. Đến khi đường cạn bớt chuyển lửa nhỏ.
Tiếp tục sên đến khi đường cạn, cho vani vào đảo đều. Nếu thích ăn mứt dạng dẻo dẻo, mềm mềm thì đến bước này có thể lấy mứt ra phơi hoặc sấy bằng lò nướng.
